Kilchoman Distillery was the first distillery to open on Islay in over a century. It is a farm distillery growing its own barley which it malts onsite in the traditional way. The distillery utilises old farm buildings, the stillhouse is in a converted mill and the visitor centre is in an old barn. The stills were designed to produce a light and very fruity spirit. Production is at a higher level than first envisaged so additional malt is sourced from Port Ellen maltings.
You can get a sense of the whole whisky making process at Kilchoman. Barley is grown on the farm, it’s prepared on the floor maltings, then it is kilned, mashed and distilled. The whisky is matured and then bottled onsite.
